Further forays into fermented foods
I’ve been contacted by some folks concerned that I’m taking this too far. They believe that, based on what I’ve been writing, I’m only eating fermented foods. This could not be further from the truth! I’m eating relatively normal… well, for me it’s relatively normal. I still eat pizza (but it’s not fermented, Dave), and steak when I can afford it, and eggs from our chickens, and salads, and more. I’m just adding fermented foods to the mix. Instead of eating sausages and potatoes and thinking that catsup was a vegetable (thanks Pres. Reagan), I eat sausage and potatoes and sauerkraut. Instead of skipping breakfast – which is what I normally did – I now drink a glass of kefir. Instead of drinking coffee all day long, a habit of mine, I now drink one large cup of coffee in the morning and then sip kvass or kombucha – and a lot more water!
Do you see where I’m going with this?
Today, instead of eating fried rice and egg rolls or sweet and sour something or other, I had fried rice and kimchi. This was the fresh kimchi that I had made 5 days ago, and wow! Flavor and spice and, just, WOW!
If you’ve never had kimchi and you can tolerate spicy run, don’t walk, to a store and get some. It’s good! And if you like what you bought,imagine how good it’ll be when you make your own! As I said in my last post, preparing fermented is dead simple!
